"Prelibato" is a natural product, as we do not add any other ingredients, and it contains the majority of the grape. This is a technical introduction to "Prelibato", while some additional information remains a "secret of the Malpighi family," a part of their family history that is important in guaranteeing the quality of all their products.
The product is aged for 5 years in wooden barrels made of frassino, or ash tree. This wood was specifically selected because it is highly aromatic and helps to clarify the color of the final product, resulting in a creamy texture.
The method of production involves carefully crushing the best parts of the "trebbiano di spagna" grape. This is done in a soft and slow manner, to obtain a transparent and white liquid. This liquid is then separated from the rest of the product and filtered. After this process, the liquid, referred to as the "must of grape," is centrifuged to thicken it without cooking, and then placed in the wooden ash tree barrels for the 5-year aging process.
The "Prelibato" White Dressing (Vinegar) is suggested for use on a wide variety of dishes, including all types of fish, mollusks, caviar, and fresh fruit.
